In the curriculum package that we wrote for The STEM Academy (5/14 release date)there is a terrific lab called "Good Vibrations" in which students work together to develop a mathematical model for the pitch of a plucked string.  It's sweet, but you need a variety of guitar strings and you need to know their linear densities.  Look no further.
